Experiment Gone Right: It's Tart Time!

I was in the mood for low-effort baking today, so I put together a tart. I'm proud to say that, although I got ideas for it from all over the web, the recipe is mostly my idea. So!




You'll need:

pate brisee for the crust (I got lasy and bought it at the store; the recipe can be found with any good quiche Lorraine)
3 large onions, finely sliced
1 tsp butter
200 g (1/2 lb) smoked fish (mackerel works great), cut into small chunks
100 g (1/4 lb) hard cheese, like Parmigiano, grated
3-4 large, firm tomatoes, cut into thin segments
herbes de Provence

Sautee the onions in the butter; add the fish and the cheese and let cool a little.
Put the pate brisee into a tart tin; spread the mixture over it.
Arrange the tomatoes on top and sprinkle generously with herbes de Provence.
Bake at 160C/325F for about 30 minutes; the crust should get nice and golden.
