A typical Monday

This morning I watched while Pete took apart a chuck: delmonicos, boneless ribs, and roasts, and what to trim for grind. I studied that chuck before he cut it, because I have the hardest time recognizing the hunks of beef when they're wrapped and sitting on the shelf. None of them are labeled, only the boxes they come out of. The chuck has a curved horn of fat at the broad end. The narrow end is trimmed, and then about a hand's breadth are good for delmonicos. The rest will be roasts. What's underneath the delmonico, which is the eye of the chuck, is good for boneless ribs.

I packed a lot of chicken and made some sausage. In the afternoon we had an all staff meeting about the new pay scale. Marty's the Lead Cutter. That's the job I want, someday. I am a Team Member, which is a level above Clerk.

This evening I went to the gym for the first time in what seemed like forever. I have been fretting over the weekends because I'm working all weekend lately, the gym closes early on weekends, and it's hard to psyche myself up to run in the cold and dark after work. Also, I want as much time as I can have with Kevin when he's home on the weekend, well rested and not just wanting to zone out. If I can just realize from the outset that I'm not going to work out on weekends, I can adjust my workout schedule accordingly. I've been getting 3-4 workouts a week, of some kind, either lifting, cycling to the farm, or running. It's hard for me to do well at either lifting or running if I do either of these activities the day previous, so I need to build in rest time around them. Since my work schedule is different every week, I'm going to have to think this out on a week by week basis.

I have been feeling a little run down the past couple of days. I wonder if I got a lot of new germs, going to the munch and then the dungeon. I blame the cold. It's been especially cold at work lately, and I'm finally wearing enough clothing for it, but I could still use some insulated boots, or some kind of special socks. My feet get numb.
