There's more than one thing that smells like bacon....

So I decided to make a nice breakfasty meal this morning--scrambled eggs, bacon, biscuits, blackberries, milk, OJ. Except I decided to use the oven for bacon, so let's go with toast instead of biscuits. Then my mind started to wander, as it does, and I figured that as long as I was planning on cooking the whole pound of boar bacon (to freeze some for later), I'd play with it a little. On the first batch, I peppered some (always tasty), candied some (as a start towards making some candied bacon ice cream at some point), peppered and candied some, and just left the rest plain.

Oh. My. God. Brown-sugar-candied bacon is the utter bomb. I really don't want to know where it falls on the "EEEEEEVIL calories" list, but wow, is it ever tasty. It was slightly overdone, and still incredibly wow.

Batch #2 is in the oven at the moment, and it's completely candied, for the eventual ice cream. Sadly, I can't find my ice cream freezer at a quick look, so I may be in trouble. Batch #3 will be for my actual breakfast (as batch #1 was eaten as a taste test after I saw it was overdone), and will likely contain no candied bacon. Probably half plain, half peppered.

Of course, now my apartment smells like bacon. Oh, well. Better to use the previously-frozen boar bacon now, before it goes really bad.
