So... Almost 18 full days down and 12 to go!
Started at 198lbs, now at 205lbs and I think the weight gain has to do with two things...
1.) My body has been without certain things for my entire life because I never eat Veggies and is now absorbing and hording them...
2.) I have been working out 3-4 times a week and prolly gained a few lbs of muscle... Especially with the increased amount of soy protien in the diet.
I made some vegetarian chili today that was absolutely dilicious (Thanks for the tip on the Tofu crumbles, Leah. A little different, but worth the experience!) And Spicy black bean burgers are wonderful with hot sauce!
I think I might try to make Tofu fajitas tonight if anyone would like to join me *wink*
Ps. Vegetarian chicken nuggets taste like chicken! I wonder how hard that was...
