I was inspired by my recent whole grains class at whole foods, particularly by a wheat berry waldorf salad... it calls for walnuts, apples, raisins, all the typical waldorf stuff BUT it had a really light dressing on it with olive oil and apple cider vinegar. it was yummy and intriguing as the wheat berries are so chewy!
i found a similar recipe at cooking light that called for rye berries and an orange vinaigrette, and also had celery, and currants. here's the original:

i added walnuts and used dates instead of currants. i also used basil because i didn't have parsley, and it was great! the result is kinda sweet but it's very good cold or at room temp, with feta on top. it did take about an hour to make but only because the berries have to cook enough to be soft. but it will last a few days and it's worth it to have something healthy to eat for lunch. and guess what? without the feta, it's vegan!!
Dr Campbell would be so proud.
i'm seriously considering trying a vegan diet for a few weeks or a month. i don't eat meat very much, i can bake successfully without eggs or butter, i love almond milk.... i just worry about giving up cheese, ice cream, and most restaurants!
