Happy Thanksgiving to all my LJ friends. I hope you are all having a wonderful day. We're actually having a nice relaxing day. Both girls are being really good and the grandparents are being good too, lol!
We usually have big Thanksgivings with 10-20+ people but this year it's just us 6. At first I was a little disappointed and Ella keeps asking when everyone else is going to get here, but I'm kind of enjoying it.
I've been cooking since last night and that's AOK with me. I LOVE to cook and since we try to eat so healthy 90% of the time I don't have the opportunity to cook really delicious things very often so I really enjoy my cooking time for Thanksgiving.
What's even more special to me is that this year Ella has spent a big chunk of time with me in the kitchen. She's very into helping me and she's really been helpful. It's so nice to share that time with her and see her excitement with cooking.
Our menu this year is:
~Turkey (cooked in a dutch oven so it's sooo juicy)
~Sausage, Apple and Cranberry Stuffing
~Gourmet Sweet Potato Classic with a brown sugar topping
~mashed potatoes
~Green bean casserole (I love this one-no cream of mushroom soup)
~corn bread (great recipe from Ilona that my MIL raves about)
Dessert is:
~Strawberry pie with homemade whipped cream
~bread pudding with a warm vanilla sauce
I can't wait to eat!
I take the left over turkey and put it in a big bag with a lot of salsa and let it marinade a couple of days. On Saturday we are having our friends over and Maggie (MIL) fries taco shells and we make turkey tacos. I'm also going to make guacamole and for dessert I'm going to try Ilona's Pumpkin Muffies.
I'm thankful for stretchy pants! HAA!
