Dinner

I love cooking on the weekends and will gladly spend a couple of hours preparing a meal, but during the week when I'm coming home at 5:30 and eating on my own I just want that empty feeling to go away.

A month or so ago I was wandering around MarthaStewart.com (something I do quite regularly these days), when I stumbled upon this recipe. I stopped by No Frills on my way home to pick up the two ingredients I didn't already have at home--ricotta and garlic--and within 20 minutes of getting in the house I was sitting down to a delicious, healthy dinner.

Since then I have made this pasta at least once a week and always make sure I've got the fixings in the pantry for a quick bite after work. I use chopped bottled garlic because I'm lazy and throw in a 1/4 teaspoon or so of dried chili flakes if I'm in the mood for heat.

Ricotta and I were acquainted only by way of lasagna or cannelloni prior to my discovery of this recipe, but now I find myself craving it.

I also imagine adding sliced chicken to the mix, or using goat's cheese in place of the ricotta... but that's still a little adventurous for me on a Tuesday.
