Rice with dry unsweetened toasted coconut and rice vinegar. Really, really should be gross--but it's fantastic. The vinegar becomes part of the aroma, and creates a very subtle sour aftertaste to the nutty flavor of the coconut. Yum.
This is my lunch, btw. Trying to think of something interesting to do with qinoa for dinner.
