Hi, my name is Gluten-free; I spent so long being sad when I couldn't eat something that now when I cook and bake for people (like baking committee at work or when I'm working with kids) I end up preparing food based on what they can eat. I've been doing a lot of vegan and vegetarian cooking lately, with vegan coworkers and vegetarian roommate.
I wish I could give you a single book with all the answers to making tasty foods forever, but I guess my repertoire is from skimming a bit from each pail, yeah? I love using the 1/2 banana= 1 egg in all my baked goods because it is CHEAP! Chocolate chip cookies are awesome- the butter-flavored shortening can has a recipe on the side that fits (avoiding the chocolates with milkfat, of course.)
Alton Brown is awesome. I think I got my sesame green bean recipe from him? Cooking green beans and onions until they're both browning nice, then adding a dash of sesame oil, sea salt and sesame seeds? When I was having trouble digesting ruffage, cooked veggies were key. I seemed to use the microwave a lot too- the high heat but short cooking time keeps too many nutrients from leaking out of all that broccoli that I steamed (and then dumped pasta sauce over ^_^)
What type of recipe are you hoping to gather more of?
Oh, I'm open to any recipes, really. The more I cook, the more knowledgeable I am in the kitchen. I love vegan baking and cooking. It isn't nearly as time consuming as meat cooking, but so much more interesting to me. I usually use ground flaxseed for my egg replacer, mainly because my son eats all the bananas in the house and my wife and daughter can't stand them. They're odd. So I just keep a bag of good ol' Bob's Red Mill flaxseed in the fridge.
