Also, real authentic tabbouleh is more parsley than it is bulghur, and way yummy.

Yup. Years ago I had a colleague from Iran who said that proper tabbouleh was a parsley salad with cracked wheat.
(We have lots of parsley in the garden, but I haven't made tabbouleh in years because how can you make it without onions?)

Hm -- I wonder if that's why I sometimes crave taboulleh, I do tend to be short of potassium in my general diet because I'm allergic to bananas...
