I lived there for a few months!

Eat at Il Latini. Your hotel should be able to find it, but you must go there if you do nothing else. It's the best food I've ever had in my entire life! Make sure that you let them choose your menu. Don't go and ask for this appetizer or that pasta... tell them you are American tourists who have heard that this is the best place in town, and you can spend x amount of money. They will take good care of you.

There is a gorgeous mask store on the Via Faenza... the mask maker is Professor Dessi, and the store is just insanely gorgeous. Go and bring your camera with you.

Try to climb to the top of the duomo around sunset, especially on a weekend. The bells will ring all around town as the sun sets, and it's just amazing.

The Palazzo Vecchio (literally old bridge) is a bridge over the river, and while you probably won't be buying any of the jewelry that is sold on it, it's worth looking at because it's so beautiful.

Go to the graveyard at San Miniato el Monte. It's an unusual experience, but trust me, the graves are really beautiful. They have mausoleums that are built in the shape of famous buildings (like the pantheon, for example) and are great to photograph.

Wake up early and go to the fish market. You'll have to be up at five or so, but the photo opportunities are amazing.

Check out the leather market as well - they have great deals on everything from jackets to wallets, and if you like to haggle, this is the place. NEVER pay ticket price there, because they will think you're crazy for not haggling.

I can't for the life of me remember the location of this place, but ask around to see where the "boboloni" place is. It's a little piece of puffed pastry that is smothered in chocolate, and it's amazing when they've just made it.

There's a paint store called Zecchi's that you should go to as well. It's right near the duomo.... their acrylics are very rich, and are even worth ordering over the phone. I used them all the time at RISD, and need to order more for myself anyway.

I'll see what else I can think of, but this is a good start....

EEE! You are awesome hun! I almost forgot you guys spent Wintersession in Florence! I will DEFINATELY check those out! Do you remember the name of the leather market by the by? I have no idea what I would buy there, but I totally want to look!

Alas! PJ just went back to Florence for a day (he and Ganeash went to Sienna for a week a month ago) and he said the Boboloni place was closed for renovations..perhaps it will be open by the time we get there, you both make me drool with your descriptions of those delicious lil things!
