So a few weeks ago, I got the cookbook of Momofuku Milk Bar. It is not only an amazing cookbook, revealing the secrets of Milk Bar's delicious treats, but it is an interesting read. Tosi provides a history of how she fell into baking and how Milk Bar evolved. It really is inspiring. I fully intend to make every recipe in the book.
The cookies are bananas. Making them is a two step process. The first step involves making what Christina Tosi calls "Cornflake Crunch". It's cornflakes, melted butter, sugar, and milk powder mixed together and then toasted. It tastes like a bowl of cornflakes with milk, and it is fucking delicious in its own right.
The cookie batter itself is a standard batter: cream butter with sugar, add an egg, vanilla, and then the dry ingredients.
It's the technique that Tosi uses that makes the cookies different. The butter and sugar are creamed together for two minutes. Then the egg and vanilla is added and the mixture is creamed at high speed for at least 7 MINUTES. The end result looks like buttercream frosting.
The flour, baking soda, baking powder, and salt are mixed in until just incorporated and then the Cornflake Crunch, mini chocolate chips and mini marshmallows. The batter is scooped out with an ice cream scoop onto a draw and chilled for at least an hour. This is another requirement for Tosi's cookies because these bad boys spread while baking. Chilling them is essential.
The cookies bake for 18 minutes. The end result is a large chewy cookie with crisp edges that melt in your mouth like toffee.
