[cheap & easy eats] easy pasta, beans, and veggies

Tonight I made Pasta Roni (angel hair pasta with parmesan cheese) and added a bunch of kidney beans and fresh veggies. I chopped up and stir fried the veggies (in water) ahead of time, which took the longest (20 min?), but it would have been easy to use frozen veggies instead to make this a much quicker meal if I'd wanted. Veggies (in the order I put them in to cook): carrots, green beans, mushrooms, broccoli. Mmm, fresh veggies -- I have a bunch of veggies and beans left over.

I thought the resulting meal was pretty tasty, and A. really liked it. So that's a pretty big success. I want to do some more curries and things, but I know A. won't be a fan of most of those, so maybe I'll do that when I'm cooking for myself. Pasta dishes and soups & sandwiches seem to work well when I'm cooking for A. Oh, and I should really try an omelet at some point, as we both like eggy things.

Incidentally, here are the things A. has cooked, to the best of my recollection:
* tacos
* chicken enchiladas
* mac & cheese with tuna
* fish (trout) and veggies
* pork chops and veggies
* spaghetti
