Today we made beer-battered pickles. It was actually quite easy to make. First we tried a recipe from the internet that was hilariously off. It called for roughly equal parts spicy seasoning and flour, plus a small amount of beer, and produced a ball of nasty dough. Even with more beer, it was just not tasty, and was quickly abandoned. So we improvised:
1) 1/2 cup flour, seasoned to taste (we used salt, pepper, garlic salt, and some hot sauce, as well as paprika and cayenne, but all somewhat sparingly)
2) Add 1/2 cup or so of breadcrumbs (we used italian, but IMHO panko would've been better
3) Add beer until consistency is reasonable (you'll know, trust me)
4) It wasn't adhering, so I added more flour and beer. Next time might be better to first coat with batter (made without breadcrumbs) and then roll in breadcrumbs or something. Or do a flour-egg-breadcrumb fry instead of beer batter.
5) Coat pickles (we used vlassic dill ovals). Fry in 375 degree oil until golden brown (again, this was fairly obvious)
While we have plenty of room for improvement, they were quite tasty. Incidentally, beer-battered crackers are not really a worthwhile endeavor.
