How to make macaroni

My step by step guide to making macaroni.



2 T butter
2 T flour
1 C white cheddar
1 C Swedish fontina (from Ikea)
3/4 C milk
1/2 box rotini



Salt and boil the water.



Add the macaroni, lower heat to medium. Cook uncovered for 8-10 minutes, checking for doneness after 8. Remove and drain when it still has the tiniest bit of bite left, because it will become perfect while sitting out and waiting.



Melt the butter in a large saucepan.



Add flour and whisk until it becomes a thick paste.



Gradually add the milk, stir until thickened.



Add cheese! Gradually.



Mix until the cheese has evenly melted.



Pour in about 3/4 C beer. The darker the better. Sadly, all I had was space beer.



Add the macaroni, which should be done by now.



Mix, season with salt, pepper and a dash of cayenne.
