This came out quite well! The carrots are a bit labor-intensive, but totally worth it. (I even made my own applesauce, actually, because New Zealanders do weird things to theirs.)
Ingredients
3ish cups whole wheat flour
1 1/2 cups unrefined sugar
2 handfuls ground flaxseed/linseed*
spoonful baking powder
spoonful baking soda
plenty of cinnamon
pinch of nutmeg
pinch of cloves
pinch of ground ginger
pinch of salt
2ish cups applesauce (no sugar added!)
2/3 cup canola oil
5 eggs
2 tablespoons vanilla extract
5 carrots, grated
1/2-inch piece fresh ginger, grated
Optional: chopped pecans or walnuts
1/2 package cream cheese (or Neufchatel)
vanilla extract
a little fresh-squeezed lemon juice
1/2 cup unrefined sugar
milk to thin if necessary
Instructions
Cake: mix all the ingredients in the first list together, leaving the grated and chopped stuff for last. Pour into cake pan, bake.
Frosting: mix all the ingredients in the second list together until smooth. Apply liberally to top of cooled cake.
Eat!
*I'd like to try this again with LSA meal (mix of ground linseed, sunflower seeds, and almonds, for those of you who aren't quasihippies).
