Josh has been craving meatloaf and looking for a good veggie recipe. On Friday I found one that looked really easy and had a number of very positive reviews so I decided to make it for his birthday dinner.
It was amazing! I will definitely be making it again. It came out a little crumbly, but there were a couple of suggestions for making it stick together better that I will have to try.
I think I am going to make it to take to my parents for Christmas dinner this year.
