Chocolate Chunk Muffins

I'm taking a page out of calger459's book, and posting a recipe! I'm more of a baker then a chef, so this is a muffin recipe. It's slightly modified from a recipe I found online.

Chocolate Chunk Muffins
Makes about 1 dozen.

Ingredients:

1 3/4 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg , beaten
3/4 cup milk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1 1/2 chocolate bars, cut into chunks (about 1/2 cup)
1/2 cup semi-sweet mini-chocolate chips or chocolate shavings (I used the shavings because I had about a 1/2 cup of them left from a cake I baked a while ago, and thought it was about time I should use them. I think the mini-chips would work.)

Preheat oven to 400°F.

Mix together the flour, sugar, baking powder, cinnamon and salt.

In a smaller bowl, whisk together the egg, milk, vegetable oil and vanilla. Add the wet mixture to the dry mixture. Mix until just moistened, then fold in the chocolate chunks and 1/4 of the mini-chocolate chips or chocolate shavings. Set aside the rest of the chocolate chips or chocolate shavings.

Either grease the muffin pan, or use those nifty paper muffin things. Fill the muffin cups 3/4 of the way. Sprinkle the rest of the chocolate chips or chocolate shavings on top of the uncooked muffins.

Bake for 20 minutes. Cool for five minutes before eating.
