Beef, Kale, Feta, Avocado, Quinoa Bowl

This was What've we got in the fridge that goes together and does not require a trip to the grocery? night.

Ingredients
    Beef sliced for stir-fry
    1 small sweet onion, chopped
    4 small cloves garlic
    sea salt
    freshly ground black pepper
    2 TBS oregano
    2 TBS herbes de provence
    baby kale
    goat feta
    kalamata olives, sliced (could mix with or substitute green Greek olives)
    1-2 avocado, chunked
    1 cup uncooked quinoa
Directions
1. Add quinoa to 1.5 cups boiling water. Cover, decrease heat and simmer 12-15 minutes, until water is absorbed. Set off heat.
2. Add butter to skillet over medium high heat. When hot, add onion, garlic, salt and pepper. Cook until onions are soft.
3. Add beef, kale, oregano, herbes de provence. Reduce heat to medium and cook until kale is dark green and wilted. ~3-4 minutes
4. Turn off heat. Add half the feta and mix in the quinoa and avocado.
5. Sprinkle the olives on top and the rest of the feta.
6. Optional: run under broiler a few minutes until olives start to wrinkle and cheese goes golden.
7. Serve hot.
8. Optional: sprinkle red pepper flakes on top.
