In hirse shows you have classes (short for classification) so in this case Western is short for Western Pleasure, which should demonstrate a horse that is a "pleasure" to ride for work in a western saddle, which was traditionally working cattle and moving out on the range so the gaits should be easy to sit and fluid. I stuck to the walk and trot only classes, Talon isn't ready to pick up and hold the canter well enough to show it off.
Out bridle and breastcollar here is actually Bavarian rather than Western, but how can you not show that off? I used it in the English class too without the breastcollar.
