Ok, so I haven’t had my favorite avocado soup in a while so when I stopped to pickup produce at the grocery store today, I was delighted to find avocados on sale! Nothing could have made my day more complete.
“Spicy Green Avocado Soup”:
~ 1 large Avocado, peeled & seed removed
~ 1/2 head of Broccoli
~ 1-2 handfuls of Chicory greens
~ 1 Carrot
~ 1 small Fennel bulb or half of a large one
~ Ginger, thumb size
~ 1-2 red
Pepperoncini, aka chili pepper
~ 1 Lime, peeled
~ 5 Garlic cloves, *** customize according to your taste I used the freshest Garlic still damp & not dried ~ WOW! ~ 2 Tb organic extra virgin Olive Oil (cold pressed)
~ 2 Tb organic cold pressed Flaxseed Oil
~ a splash of Coconut Vinegar
~ a splash of Apple Cider Vinegar
~ 1/4 tsp salt
~ Water
Powdered Spices: 1/8 tsp Cinnamon, 1 tsp Curry, 1/4 tsp Cumin, 1 tsp Coriander, a dash of Cayenne pepper
I added all of the ingredients to the blender and added water as needed. I always do a taste to decide if the flavor is the way I like it. I don’t have access to fresh cilantro but it would have been the perfect addition! Because of the heat from blending, I don’t have to add any heated water.
I pour it into a bowl and top it off with some spices like curry powder, chives, cayenne pepper, and a little dill. If I’m in the mood, I’ll add a little dollop of some sunflower cheez, which resembles a sour cream. Very nice!
So, for another wonderful Purée I had created a short time ago,
“Garlicky Pumpkin Purée”:
~ 2 1/2 - 3 cups cubed Pumpkin
~ @4 large sprigs of Parsley
~ 1 inch Ginger, thumb-size
~ 2-3 Garlic Cloves, more or less according to your taste
~ 1/2 small Red Onion
~ 1 tsp Capers covered in Sea Salt, or to taste
~ 1 Apple, cored & peeled
~ 1 - 1-1/2 cup Almond Milk *** Fresh is best! See my
recipe ~ 2 cups of my Rooibos Chai, ***See below for my recipe
~ 1/4 cup organic extra virgin Olive Oil (cold pressed) *** Sometimes I’ll mix 50% olive & 50% flaxseed oils
Powdered Spices: 1 tsp Cinnamon, 1 tsp Curry, 1 tsp Cumin, 1 tsp Coriander, a dash of Cayenne pepper, ground Pepper to taste
In a high-powered blender, add all the heaviest ingredients to the bottom with the rest on top along with the almond milk and 1 cup of the Rooibos Chai. As it’s blending, you may want to add more of the Chai if it appears to still need to be diluted. This turned out to be one of my favorites and the heat of the blender warmed it to just right the right temperature.
***Rooibos Chai ***
1/2 liter of hot water added to 1 Tb Rooibos, 1/4 tsp Cinnamon powder, 1/2 tsp Anise seeds, 1 tsp Coriander powder, 1 tsp Rose Hip powder, 4 Cloves, 1/2 tsp Ginger powder, & just a bit of Ground Pepper. Cover to let steep for 15 minutes & filter with strainer into your cup.
