If you only knew what it took to finalize these 2 blog entries.  Moving on to more enjoyable and tasty delights we can make ourselves!

“Eat, Drink, & BE Merry...”

I ended up spending the time writing up this blog entry listening to the Crash CD as these words evoked this song:

“Cashew Hummus”:

~ 2 1/2 cups sprouted Chickpeas ***these take 3-7 days & require several rinses along with removing the external casing before adding to the recipe

~ 1/2 - 1 cup raw soaked Cashews ***soak rinse a few hours prior

~ 2 garlic cloves, more or less according to your taste

~ 1/4 cup extra virgin Olive Oil (cold pressed) *** Sometimes I’ll mix 50% olive & 50% flaxseed oils

~ 1 Lemon peeled & juiced ***I add the entire lemon & peel off the rind

~ 1 inch Ginger, thumb-size

~ 1 tsp Sea Salt, or to taste

~ 1/2 tsp Curry powder

~ 1 tsp Cumin powder

~ 1 tsp Coriander powder

~ ground Pepper to your taste

~ 1/4-1/2 tsp Cayenne powder, again to taste

~ 1 cup of Water plus some to add for desired consistency

In a high-powered blender, add all the ingredients + 1 cup of water and blend until it’s smooth.  You may need to add more water depending on how thick or thin you prefer the consistency.

It’s always best to start off with less spice, salt, or garlic and taste it to see if you want to add more.

Tonight’s Simply yummy
“Hummus & Lime Asparagus Salad”:

~ 7 Asparagus chopped up

~ 1/4 cup of finely chopped Italian parsley

~ 1 cup of chopped Agretti (aka Monk’s beard)

~ a handful of finely chopped Rucola

~ 1/2 cup Cashew Hummus, see recipe above

~ 1 cup of finely chopped Kelp Noodles

~ 7 Piccadilly Tomatoes sliced up

~ 1 Lime skinned & pulp chopped up

~ 3 Tbs of Flaxseed Oil

~ dash of Coconut Vinegar

Powdered Spices:  Curry, Ginger, Cinnamon, & a dash of Cayenne Pepper

Simply, I place all the chopped ingredients: asparagus, parsley, rucola, agretti, tomatoes, lime juice and pulp, and Kelp noodles in the bowl.

[insert the M&M candies’ “You get in the bowl!”]

I poured the thick cashew hummus along with sprinkling the powdered spices on top and then poured about 3 Tbs of flaxseed oil, dashed in some coconut vinegar, and mixed it all up.  Mmm!

***The flavors were quite lovely as the lime and coconut vinegar enhanced all the flavors together.

My morning

“Spicy Green Horchata”:

~ 2 cups of Greens ~ spinach is ideal but broccoli also works!

~ Ginger about the size of your thumb, powder also works

~ small Banana ~ frozen is best

~ 1 cup Almond milk *** Fresh is best!  See my recipe

~ water

Powdered Spices:  1/2 tsp Coriander, 1/8 tsp Cinnamon, 1 Tb Maca, 1 tsp Mesquite, a dash of both Nutmeg & Cayenne Pepper

I add the ginger, almond milk, banana, powdered spices, and greens on top to your high-powered blender and blend until mixed.

Taste and see if you need to add additional flavor!

I have a favorite warm drink I like to make, I call it my

“Shilajit Mocha":

~ 1/4 tsp Shilajit powder *** This stuff is amazing!

~ 1 1/2 Tb Black Sesame Tahini

~ 9 Goldenberries soak 1/2 hour in enough water to cover

~ 1/2 cup Almond Milk *** Fresh is best!  See my recipe

~ very small Banana or half of a large one

~ 2 Tb raw Cacao powder *** Raw Carob is also a nice substitute or addition!

~ 1 Tb Lucuma powder

~ Ginger about the size of your thumb, powder also works

~ 2 Tb Organic cold pressed Coconut Oil

~ 1 Tb Coconut Butter

~ 1 Tb Coconut shreds/flakes

~ heated water

Powdered Spices:  1/8 tsp Cinnamon, 1 Tb Maca, 1 tsp Mesquite, a dash of both Nutmeg & Cayenne Pepper

Add the goldenberries to the blender with just enough water to cover or just add the 1/2 cup of almond milk, black sesame tahini, shilajit along with all the spices and powders on top.  Then add the banana along with the coconut butter, oil, and flakes.  I start out with just a little because even in the high-powered blender, the goldenberries take a little bit to break up and I like to keep the liquid low until it’s blended well.  It will come out thick so you can add more almond milk if necessary.

I heat up the water and once the mixture is mixed well, I add just a little hot water to my mug, pour in the mix, and whip it up with a spoon into a Mocha-like dream!  I may add more hot water depending on how warm I want it.  Whatever I have left in the blender, I use the warm water to wash down the sides so I don't miss any of this Yummy treat!

Shilajit is a perfect compliment to Cacao and Black Sesame Tahini...and sooo good for you, too!

Another new warm drink I recently created

“Silky Coconut Cacao Mint Dream":

~ 1 cup Almond Milk *** Fresh is best!  See my recipe

~ very small Banana or half of a large one

~ 1/4 tsp Shilajit powder *** This stuff is amazing!

~ 1 Tb Maca powder

~ 2 Tb raw Cacao powder *** Raw Carob is also a nice substitute or addition!

~ 1 Tb Coconut Butter

~ 1 Tb Coconut shreds/flakes

~ 4-5 fresh Mint leaves

~ dash of Nutmeg

~ heated Water

Once again, I added all the ingredients to the blender until mixed.  I heated the water and added some to the blender as the coconut butter needs a bit of warmth to melt it before I blended again. Then, I added some to my mug and poured in some more hot water to top off with a whip of my spoon!  Oh, this one is a winner!

Note:  ***If you don’t like coconut, you can make a Silky chocolate Mint Dream by using all the same ingredients minus the coconut butter & flakes...

“Kefir Berry Chip Bliss”:

~ 1 cup Almond Milk *** Fresh is best!  See my recipe

~ 1/4 - 1/2 cup of frozen Blueberries

~ 9 raw Cacao Beans

~ 1/4 tsp Vanilla powder

~ 1 scoop SunWarrior Rice Protein powder

~ 1 Tb Maca powder

~ 3 Tb Hemp Seeds

~ 2 tsp Chia Seeds

~ 2 Tb raw Carob powder

~ 1-2 cups water Kefir *** See The Kefir Lady!

I add the almond milk, scoop of Sun Warrior, maca, chia, hemp, carob, vanilla, blueberries, and cacao beans and blend them all together until smooth.  I add a cup of the water kefir and blend again...I add more if I feel it needs it.  It’s quite “De-liteful & Berry-licious!”
