You're lookin' at the 2009 Chili Cookoff Winner!

Yep, I got first place this year. Our work does a chili cookoff every year the week of the superbowl. The competition was fierce this year, with 10 entries. (we have 12 employees, LOL).

I don't really follow a recipe, but this year my key ingredient was ground buffalo. I think I will use this again. I liked how the meat stays together and doesn't disintegrate.

the cook off is a bit of a challenge as it's not competition chili, more like eatin' chili. (eatin' chili vs. competiton chili) and a lot of people are wimps so I can't make it too hot. And oh, I could make it flamin' hot!

the name of the chili was Buffalo Bill's Kickin' Chili. I used the aformentioned buffalo along with chuck steak that I cubed. Chopped onion. 3 types of beans (I know). tomato paste, beef broth, two large cans of crushed tomatoes, 3 large cloves of garlic, and a menage of ground chili peppers (cayenne, ancho, chipotle), cumin, etc etc etc. We have a seasoning here called Everglades seasoning which is really kind of a season salt. But it's tasty.

I browned the meat with the onions, garlic and a glug or two of olive oil. Then added the seasonings letting them kind of infuse the meats. Then dumped everything else in the crock pot. I dickered around with some other hot sauces. T grows seriously hot peppers and I used some of the sauces that he makes with them. It had a little kick. I was hoping for a slow burn. Little bit of heat at first followed by a gradual warming. T added a pepper or two when I brought it home and not it's really kickin'. mmmmmm
