Roasted fennel "leaves" - idk what to call them - the pieces of the bulb when you peel it apart - they are so, so, sooooo good. and good for you. I bought two bulbs and put part in the soup I have cooking, and roasted the rest. I should have brushed them with olive oil and sprinkled sea salt on them, but I have no olive oil, only coconut, and that is currently solid since they fixed the thermostat and it is no longer 84 degrees in here. :-) but it tastes great the way it is.

the soup has fennel, celery, carrots, potatoes, parsnips, a turnip, onions, ginger, and I think some other things I have forgotten. oh, the chicken stock I made, though I had to add a lot of water to it. I have chicken sausage to bake and put in it, but I have my leftovers reheating right now... there is almost not enough room for the sausage, too! I didn't have enough room for the Yukon golds I bought, and I hope there is room for the kale at the end.
