- Used 1/2 white sugar, 1/2 Splenda Baking Mix (measures cup-for-cup like sugar). No discernible taste difference. Recommend. - Added a few tablespoons of pre-soaked chia seeds. Increased milk by 1-2 tbsp or so. - Went heavy on the nutmeg, cinnamon. Almost doubled the vanilla. - Had almost 1/2 cups of mashed banana - 2 quite overripe and 1 very ripe, all medium size - Smashed my chopped walnuts a little smaller with a mallet and used slightly more than 1/3 cup. Recommend. - Added 1/3 cup of craisins to 6 of the muffins. Taste is fine but extraneous. Texture became a little weird/muffin didn’t hold well together when cut. If repeating, try chopping the craisins a little smaller and/or rehydrating them first.
Evaluate: - Toasting the walnuts before smashing - Adding ground flax - Soaking chia in milk instead of water? - Decrease total sugar to 2/3 cup - maintain 50/50 ratio. - Experiment with chocolate protein powder for some of the flour?
Baked in disposable standard 6-well muffin tins. Yield of 18 very accurate. Greased the naked tin with butter, those muffins rose less (wider diameter?) and needed to run spoon around to loosen. Used foil muffin cases in the other 2 tins: sprayed cases with non-stick coconut oil. Nice peel, not much stuck to the cases.
