You don't have to use bacon in this recipe, if you'd prefer it without just remove it completely from the recipe. You don't have to change anything else :]
Toad in the Hole:
Sausages (as many as you want)
Bacon (Optional - Same amount as the sausages)
2 Eggs (You can use one if you wish the recipe to be less 'eggy')
120g (4 oz / 1 Cup) of Plain flour (All Purpose flour)
1/4 litre (1/2 pint) of milk
50ml vegetable oil
Salt/Pepper/Sage (for seasoning)
Step 1: Cook the sausages
Pre-heat the oven to a temperature of 220ºc (425ºF / Gas Mark 7)
Wrap the bacon around the sausages.
Add the oil to the oven dish, place the sausages in it and put them into the oven.
Step 2: Make the batter
Tip all of the flour into a mixing bowl (no need to sieve it) and add sage, salt and pepper to taste.
Make a well in the flour & crack the 2 eggs into the bottom.
Add the milk & whisk all together
The batter will be ready once there are no more lumps in it.
Step 3: Add the batter to the sausages
After 10 minutes of roasting, your toads will be slighty brown.
Take the oven dish out, and pour the batter over them so it fills up the oven dish completely. You don't need the sausages disappearing under the batter so don't worry if you think you need to completely submerge the sausages, you don't!
Now put the sausage and batter back in the oven for 20 minutes.
Step 4: Remove from the oven
If everything's gone according to plan, the batter will have risen nicely around the sausages :]
Add to your roast potatoes, smother with gravy and enjoy! :D
