i have a PLU for what they call tasting flights. it doesn't have any cheeses listed on it, just the name and the price. which basically means i can put whatever cheese on it that i like. all i need to do is add the ingredients list of the cheeses i put on there and i'm good. so that's what these are.
flights i made for Mother's Day this weekend.
nothing i made. but i had to share the absolutely gorgeous coloring of the rind on this cheese. its a goat gouda that has had its paste infused with honey. and then soaked in honey to give the rind this glorious, mellow gold color.
ever seen an entire wheel of parmigiano reggiano? that's over 82 pounds of Italian cheesey goodness.
my hand to give an idea how big the wheel is. those tools on top are what i use to help me crack it open. when i do, it looks like this:
