getting cheesier

so i thought i'd post more pictures of my cheese shop and what i've been doing in the past few months.

i really love my job, despite all the politics and bullshit that come along with working for a corporate business (any business, really). it gives me a chance to be artistic at work, which feeds my soul when i can't make the brain brain. like now. i want to share my cheesiness with my friends because, honestly, if i'm not making your life cheesier, i'm not doing my job.

all pics will be behind a cut, because that's just polite and all

so, technically, i'm supposed to have cheese flights out every weekend. flights are the boards with various cheeses and a little accompanyment. depending on which flight, it can range from only dried fruit to dried fruit, nuts, and some kind of spread. generally, i only make boards for company or holidays. they don't always sell and my area isn't big on big spenders, so people look at the cost. the boards on this post are from last November. we have what Kroger calls Open House in November and December, as a way of drawing customers in to buy. lots of samples, lots of pasted on smiles, lots of higher ups.



this flight is called Better with Age. every cheese on it is aged. from left to write is Grand Cru (cubes), aged Havarti (planks), aged cheddar (triangles), and aged gouda (the other plank looking shape)



this is the World Wonders flight. Aged Manchego, Estate gouda, English cheddar, and Parmigiano Reggiano make up this flight



Europe's Finest, which includes Irish Cheddar, double creme brie, Emmentaler swiss, and roquefort



this is the LIfe is Gouda flight. 1000 day aged gouda (its hard enough you can hurt someone if you hit them with it),  smoked, a reserve, and what they call a farmhouse gouda. i can't remember which one that is, unless its the red wax. Kroger redid their core list and at least two of the goudas on this flight were discontinued and i haven't made it since



the Full of Flavor flight. Merlot bellavitano, pepper jack, black pepper bellavitano, and smokehaus blue. the bellavitanos are such good cheeses. they're all award winning from Sartori. bellavitano is the actual name of the cheese, one they crafted specifically for their company. its nutty and creamy and really tasty.
