Dinner tonight- spaghetti and white beans

I cannot believe how OMG yum this was. (Note: I am not in general a huge fan of beans.)

Lily's not feeling well and wanted "just spaghettis" for dinner. (I got yelled at for being so bold as to add butter.) I wanted something a little more substansial so I took mine and mixed it with some of the white bean spread I made for lunch and some pasta water and it was FABULOUS!!!!!!!

If I were making it for the family, this is what I would do:

Cook 3/4 lb to a pound of spaghetti according to the directions. Reserve about a cup of cooking water before draining.

Remove the casings from a package of turkey sausage and brown. Remove from heat when cooked through.

In a food processor, combine 1 can of white beans, drained and rinsed, 3 cloves of garlic, 2T lemon juice and a few T of olive oil. Process and add water until smooth.

Add the hot pasta to the pan with the sausage. Dollop the bean mixture on top and mix in with enough cooking water to make a smooth, creamy sauce. Stir in a generous handful of chopped parsley ald salt and pepper to taste. Serve with parm on top and a salad and crusty bread and butter. NOM NOM NOM.
