dinner tonight- Kale and white bean soup

1 T olive oil
1 pkg sweet turkey sausage, casings removed
1 small onion, chopped
1 med. red potato, diced
1 carrot or a handful of baby carrots, in coins
1/3 c. white wine
4c chicken broth
~4c kale, stems removed and sliced
a can white beans (I used butter) drained and rinsed
1T jarred garlic
grated parmasean
crusty bread

Cook sausage in oil over med-high heat, breaking the sausage up until sausage is browned. Add onion, potato, and carrot and saute for 3 or 4 minutes until onion is softened. Add wine and broth and bring to a boil. Add kale, beans and garlic. Reduce to a simmer and cook about 10 minutes. Ladle into bowls and sprinkle with parm and eat with crusty bread and the rest of that bottle of wine you had to open.
