Last night I made this. It was yummy so I thought I'd share the joy...
6 large potatoes, peeled, washed, chopped into bite size bits
1/4 cup chives
2 T fresh parsley
4 cups chicken broth
1 cup sharp cheddar and/or smoked gouda cheese
1 cup Half and Half
cheddar cheese and bacon crumbles
Put 4-5 of the potatoes in a large pot (or crockpot) with enough chicken stock to cover them and cook until just passed tender. Dump all the cooked potatoes and half the liquid into the food processor and whiz until it's mushy.
Add the mushy potatoes back into the large pot and stir to mix with the chicken stock that was left behind. Keeping it on low heat, add in the potatoes, chives, parsley, remaining chicken broth and cheese. Let simmer, stirring infrequently for about 30 minutes or until the potato chunks are tender. Add the cream, stir and spoon into a bowl. Top with the cheddar cheese and bacon crumbles and enjoy!
