rainbow choc cakes

Taken, once again, from an AWW recipe book. These are so rich, and very fun to make, though prepare to be covered in chocolate (unless you're a whiz with a piping bag, which I am not). I got fifteen, not twelve, and didn't pipe them properly.

Cake:
60g dark chocolate, chopped coarsely
2/3 cup (160ml) water
90g softened butter
1 cup (220g) firmly packed brown sugar
2 eggs
2/3 cup (100g) self-raising flour
2 tablespoons cocoa powder
1/3 cup (40g) almond meal
1/2 cup Smarties
1/4 cup rainbow chips
Ganache:
1/2 cup (125ml) cream
200g dark chocolate, chopped coarsely.

Preheat over to 170C/150C fan-forced. Line 12-hole muffin standard pan with paper cases.

Make chocolate ganache:
Bring cream to the boil in small saucepan; remove from heat. When bubbles subside, stir in chocolate until smooth. Transfer to small bowl; refrigerate 1 hour, stirring occasionally, or until firm. Beat with an electric mixer until smooth.

Meanwhile, stir chocolate and the water in small saucepan over low heat until smooth.

Beat butter, sugar and eggs in small bowl with electric mixer until light and fluffy. Stir in sifted flour and cocoa, meal and warm chocolate mixture. Drop 1/4 cup of mixture into each case.

Bake about 25 minutes. Stand 5 minutes; turn, top side up, onto wire rack to cool.

Fit a large piping bag with a large fluted tube, half fill bag with ganache. Pipe swirls on each cake, top with Smarties and rainbow chips.
