One thing that helps: A can of Progresso tomato soup? Is 2 servings of veggies. So just eating that for lunch can boost those points.
As for callisthenics, I've not been letting myself go to bed until I've done at least 50. I've already determined that I'm not gonna make the 3,000 goal this month, and that's okay, as long as I do at least half of that. But even if I'm lying in my bed and I think, "Crap, I haven't done my callisthenics," I'll do them right then and there. Yes, in bed. It's painful for a couple minutes, but afterwards, I feel good because I actually did them. Plus, I've been getting comments from my friends that it looks like I've lost weight, which is REALLY cool :) So it's also inspiring to keep going based on that.
Maybe assign a friend you trust to force you to do your callisthenics? As in, don't let them allow you to do something or other until you've done them?

I liked the veggie burger idea for veggies that was posted earlier so I might start doing that - I love burgers so if I turn that into a snack, without the bread, that'll help me boost.
