Of course, I have to share my food related successes. I put too much effort into thinking about what to make today to not bask in it at least a little bit.
So, here was the meal.
Chicken: Marinated in lime juice, orange juice, garlic, coriander (cilantro), green chile, olive oil, and salt. It was then grilled (broiled).
Salsa: Tomato, red onion, coriander (cilantro), lime juice, red chile, salt, Diced and mixed together.
Avocado: Avocado, red onion, lime juice, salt. Avocado sliced and slightly mashed. Everything else diced.
Served on a ciabatta roll along with roasted broccoli.
I'd rate it as one of the better dinners I've done in awhile. It didn't take a lot of time but was delicious. It all tasted very fresh and very filling. I toned down the heat from where I'd really want it and Cindy actually ate and enjoyed the salsa. That was worth not making it super spicy.
