Yesterday I made the last recipe for last week, as I got so behind when I stayed at the corgis' house. It was
Pan-Seared Chicken with Dried Cherry & Pistachio Quinoa. I was a little suspicious of the quinoa, as I didn't care for the couscous and thought the farro was just okay, but I liked it a lot, and mixed with the spinach, cherries, pistachios, garlic and shallot, it was great! The whole thing was Mom's favourite dish so far. I forgot to put the feta on before serving, and it was so good without it that when I tasted it with it, I didn't like it as much, and I really love feta. Getting that little sweet pop of the cherries or the crunch of the pistachios, it was fantastic. I will totally make it again.
The chicken was good, too, but took an absolute year to cook. Next time I'm putting the chicken on first, because we ended up not eating until 11.30p.
And I thought I didn't like spinach! My whole life I have not cared for spinach. Mom would boil it and put lemon on top, blech, and I absolutely detest raw spinach, as it tasted precisely like dirt. Apparently what I was waiting for was to wilt spinach in a sautee pan with garlic and shallots, because even without the quinoa and the rest of it, it was the best spinach I have ever tasted.
