Typically I just improvise when I'm making scrambled eggs for breakfast, but today I decided to actually jot down my various ingredients. So this morning, along with a dozen pieces of bacon (mmmmm, cholesterol!) I made
Savory Scrambled Eggs
Ingredients
* 2 large eggs
* 1/4 cup milk
* 1/4 teaspoon black pepper
* 1/4 teaspoon garlic salt
* 1/4 teaspoon ground coriander seed
* 1/4 teaspoon Mrs. Dash's garlic and herb spice mix
* 1 tablespoon bacon bits
* 1 large pinch of shredded cheese (cheddar, jack, or a mixture of various types works best)
Method
Typically I'll end up cooking these in leftover bacon grease, in a medium nonstick frying pan or skillet. Alternatively, smear the pan or skillet with butter or margarine.
1. Heat frying pan or skillet over medium heat.
2. Crack 2 eggs into a small mixing bowl. Add milk, cheese, pepper, garlic salt, garlic and herb mix, ground coriander seed, bacon bits, and cheese to eggs. Mix thoroughly with a fork.
3. Once the butter or margarine has melted, pour the egg mixture into the skillet. Stir and scramble with a wooden spoon until almost all liquidity in the mix has been cooked away. (You want to have the scrambled eggs begin to clump together with the mix of melted cheese, but still have some moisture to them. This takes practice, but in my experience it's about 30 to 45 seconds after the last of the visually obvious liquidity in the eggs has been scrambled up.)
Goes great with traditional breakfast fare -- fresh fruit, toast, bacon, orange juice, and that sort of thing.
