Veggie broth, double amount of water, slowly simmered an organic chicken breast with skin in it with a dried piri piri and some fish sauce. Could have used chicken broth, but I don't trust what the broth producers put in there...

When the chicken was ready, took it out, removed the skin and sliced it, while rice noodles were softening in the broth.

Big bowl, chicken, noodles, broth. Serve with chop sticks and spoon, pour lots of the hot noodles and broth down your bare stomach.

Fantastic.

Was a little worried that the broth would be too strong, but with the noodles and all, the strong veggie salty broth flavour didn't dominate.

Next time I'll add lots of fresh coriander, possibly a little thai basil, a thinly sliced garlic clove, finely chopped spring onion, bean sprouts and lots and lots of lime...
