kidney!

Tonight I made veal kidney. It's really amazing how over the course of two years in France, I never once ended up buying some from the butcher and making it myself. Perhaps because Christian wouldn't eat it and so I'd have to make it just for myself. And boy does it make a lot of food -- I'm thoroughly stuffed.

Our market butcher had some this week and I followed a French recipe, except I added shitake mushrooms because glancing on the picture I had mistakenly thought there were mushrooms in the dish and bought some, but it turns out there aren't and I didn't want them to go to waste. I never would have expected that mustard and tarragon go so well together, especially in a meaty cream sauce.
