i made the best soup yesterday, pretty much by accident.  i had two really large sweet onions which were needing to be cooked.  i sliced them and started them cooking in butter in a large pot.  then i washed five scrawny little red potatoes which were on their last legs and sliced them thinly (skin on), cutting the largest pieces in half again (wanted them to fit in the mouth).  by that time the onions were in good shape so i tossed in the potatoes, ground some pepper over everything and tossed in liberal sprinklings of thyme.  i added water to cover, then decided to add a can of mushrooms.  i had part of a head of red cabbage and about 8-9 baby carrots which i chopped all finely, and added.  i looked around to see what else drew my fancy and spotted a can of white beans which went right in the pot.  then i spied some colored orzo which i’d had for several years (forgotten about actually) and threw in several handfuls of that.  everything came to a boil, i added a little more water, then i turned it down to simmer.  i rummaged through the freezer, found some cheese smokies and threw them in.  when i figured the potatoes were done and the smokies were warmed up, i turned off the fire and let it sit.  i finally decided i was hungry about an hour later and helped myself.  to TWO bowls.  it was delicious!
