Nice! And I agree, most cake frostings are teeth-hurtingly sweet. I, personally, cut the sugar by almost half in most of my frostings; I sometimes compensate with gelatin or guar gum, but most of the time I just allow my frostings to be a bit floppy.

Dude, where's Cake #1?

I know Trader Joes sells crystallized/candied ginger. I think I've seen it in the QFC bulk section too, but I woudn't swear to it.

Also, I cut down the sugar in the cake some - maybe 3/4 of each brown and white rather than a cup each.

Cake #3 sounds pretty good.

My dad has been a big cake baker at different times, and I can get you some fine recipes if you like.

Also, I can hook you up with better crystallized ginger than you will find in a grocery store. I have a 5 pound can of it right now, and I have the wholesale source if you want a can of your own. (IIRC it's about $25, but I don't remember for sure.)
