Eating Beaver

Went rabbit hunting this morning. Took Ruger... He's rusty, but did very well. I saw the rabbit a couple times, got one shot off at it, but had too many little trees and stuff in the way...plus he was hauling ass. Then Eddie got off a shot, too quick though, but the rabbit ran right into Eddie's dad's shot. Caught up the dogs and started to leave, when the guy that owned the property came back and called us over to talk to him. He'd trapped three big beavers and a coon, and was skinning out one of the beavers.

Side note: beavers are *huge*!

Anyway, he was just gonna throw the meat away, and it was a fresh kill, so he gave us the skinned and gutted beaver. We took it home, cleaned it and butchered it. The dogs got the head, tail, one hind leg, ribs and spine, the rest (one hind leg, both front legs and the tender loin) was re-cleaned and put in a pot. I cooked the legs, boiled them then baked them, and made mashed potatoes. I didn't think I'd like the meat, but it's actually really good. Something like mild venison. I'm gonna make beaver stew tomorrow. :D
