Description and method: So last night as I was falling asleep I was thinking about what I wanted to make for lunch the next day. I had some leftovers from the pot roast dinner that needed to be eaten: mashed potatoes, peas, and a small amount of beef. I was dreaming of mixing all the ingredients together and spreading them in a layer between a slice of mozzarella and a slice of cheddar in a grilled cheese sandwich and how wonderful and disgusting and trashy it would be all at the same time. I dreamed even about adding a slice of thick, meaty tomato to it. I then promptly fell asleep for some ten hours and didn't wake up with a migraine for the first time in more than a month. My brain must have really liked the idea!

When I woke up I quickly discovered that there were entirely too many mashed potatoes left for this, so I modified my plan slightly.



Peas on top of potatoes and you can see where I'm chopping up the beef. I actually managed to injure myself chopping the beef. I stabbed the pad of one of my fingers with the tip of the knife -- go me! You can also see here where I still had the margarine out (thanks mom and dad for picking some up at Costco for me yesterday!) as well as the cheddar, which is that little corner of orange in the zip lock bag that you see to the right.



Dump it all together. Note the egg sitting off to the side. Those eggs were marked due July 31, 2008. They still sink when I put them in a glass of water, and don't smell when I crack them open, so whatever!



Uhh, when in doubt, add cheese?



I added the egg and a little bit of flour and mixed that mess up. Looks fantastic, doesn't it?



Mmm. Yummy. Fried goodness for lunch! I love the way the little bubbles pearl up around the potato mass.

Damn it. Rookie mistake! Not nearly enough flour. Instead I get happy fried lump of.. stuff. So I dumped it all into a bowl:



God that looks gross.



Ahah! A little ranch dressing (I'm out of sour cream, sue me!) makes everything better! As it turned out the bowl of mash was actually really good! Everything was all potatoey and sweet-pea-ie and beefie and crunchy and soft! Really quite nice.



I added a bit more flour to the remaining mixture and the croquettes held their shape this time. It was, in the end, a very successful foray into trashy food made with the leftovers of a very yummy dinner. Two thumbs and a cat tail up!
