Ok, so we missed about a week of lunches that consisted of a bottle of water and some yogurt. Apparently I didn't have much in my fridge the week before vacation lunch-wise. I may do a post full of lost lunches, we'll see.
Description and method: Scrambled egg sandwich! I am an egg purist, so all that exists in the scrambled eggs is, well, egg. There's a little butter in the pan (I ran out of margarine and am still out, actually), and that's about it. They're cooked on a medium-ish temperature and barely touched. This leaves them incredibly soft and fluffy, which is just how I like them. WITH NO BROWN BITS, PLEASE!
There's a little butter on each slice of bread (I miss my margarine, seriously. Can you see the plate of half melted butter beside the bread? Heh.) and the bread is super soft and fluffy. I don't like scrambled egg sandwiches when the bread isn't super soft and fluffy.
