We have a cake rota at work and every Tuesday someone produces cakes - either homemade or shop bought - for the rest of the team. This week I did a Chocolate and Orange Marble Cake, and Apple Rock Cakes. The rock cakes brought back happy memories for several people and one request for the recipe. So here it is, courtesy of an old Woman's Weekly, so it's using imperial measurements.
Apple Rock Cakes
8oz self raising flour (or 8oz plain and 2 level teaspoons baking powder)
1 level teaspoon cinnamon
4oz butter or margarine
1 medium cooking apple, about 8oz in weight (this produces about 6oz raw apple)
3oz caster sugar
4oz mixed fruit
2 eggs, size 3
Set the oven to moderately hot, Gas Mark 5 or 375F/190C. Grease 2 baking sheets.
Sift the flour (baking powder if used) and cinnamon together.
Rub in fat until mixture resembles breadcrumbs.
Stir sugar and mixed fruit into rubbed-in mixture.
Peel, core and chop the apple into about 1/2 inch cubes, and add to mixture.
Beat the eggs and stir into the mixture with a fork.
Using two forks or a spoon, put the mixture in rough heaps onto the baking trays.
The heaps should be about 2 inches across and leave 2 inches between since they spread.
Bake in the over for 20-25 minutes until brown.
