Dinner last night was awesome.  Apparently everyone already had plans, but I made almost everything anyway (I skipped out on the rice and the gyoza).  I made salmon patties with a dipping sauce and a three bean salad with a kick-ass dressing.

The salmon patties: 1 large can salmon (pick out skin and bones), some green onion, some whole wheat bread crumbs, and egg to hold it together.  Cooked in canola oil. Just one can made 7 generously sized patties (2 patties per serving) using almost no breadcrumbs.  I should have used more breadcrumbs and made 8 patties.  Whole grains are your friend.

The dipping sauce: non-fat plain yogurt, a litle mayo, toasted sesame oil, soy sauce (I subbed in bragg's aminos), grated ginger.  Garnished with green onion.  This stuff was seriously SERIOUSLY AMAZING and low fat, especially considering the more commonly used mayo heavy tartar sauce.

The salad: a bag of shelled soy beans, a can of black beans, a bunch of lightly steamed green beans, and green onion.
The salad dressing: canola oil, rice wine vinegar, orange marmelade, a tad of sugar, and grated ginger.  Yum Yum!  The recepie called for apricot jam, but I didn't take the recepie to the store and just remembered that on TV the jam was orange colored.  The flavor was awesome anyway.

Here's the best thing... a ton of food (I stuffed myself and still have enough for a full lunch (salad, patties, and dipping sauce) and PLENTY of leftover salad) and it cost well under 15 bucks.  Would have been enough for four people.

Now... buying all the ingredients cost a little more than 15 bucks... but I have lots left over.  For instance, I only used a few spoonfuls of marmelade, and only a very small portion of that giant tub of plain yogurt.  Also, I have a feeling I'm going to be putting fresh grated ginger in lots of things for a few days.  I'm thinking ginger-orange glazed chicken breast next week. Also, some sort of pita/lamb dish with yogurt based dipping sauce. How delicious does that sound?

I know what you're thinking, SALMON burgers for 4 people plus a great salad at that price?!?! The big secret: Canned salmon is CHEAP.  A big can is about $2.50.  Wild-caught Alaskan Salmon.  It's not even more expensive than canned tuna!  And all those beans are so inexpensie it's crazy.

Everyone who calls Whole Foods "Whole Paycheck" can bite me.  They just don't know how to shop.

Yesterday was a good day all around.  You know those days where you FINALLY do one of those things that's been on your list of things to do for... oh... 5 years.

I got castings done to get myself a retainer!  I also talked to the dentist about some stains on my teeth I want to go away.  Apparently professional bleaching has only a chance of getting rid of them.  The stains are under the enamel.  They were probably hastened along by my crooked front tooth.  Who knows.  What I do know is that my dentist is AWESOME and will do her best to take care of it.

My dentist rocks.  She's the best dentist ever.  Too bad she's 61.  I can't keep her forever.  She'll eventually want to, you know, retire.  But not before all my teeth get fixed up.

I opted only to fix my top teeth.  I only have one very slightly crooked tooth on the bottom.  It's not worth hundreds of dollars to fix it since you can't really see it when I talk or smile.

Oh, and I even went to the gym.  Talk about productive!!
