GF Bacon Cornbread

This is a fabulous grab-n-go breakfast !

1/2 C GF flour mix 1 c evaporated milk
1 tsp xanthan gum 1/4 c honey
1 c cornmeal 2 eggs
1 Tbsp baking powder

1 lb Farmland Pork & Bacon sausage

Preheat oven to 350°
Precook sausage to crumbles, set aside - do not drain fat!

Mix GF flour, xanthan gum, cornmeal and baking powder.
Stir in wet ingredients.
Fold in sausage crumbles with fat.
(good cornbread needs fat)

Bake at 350° for 20-25 minutes in greased 7" by 11" pan for thick or 9" by 13" pan for regular cornbread.
