actually i am posting the original recipe, which was for banana chocolate chia seed pudding. the banana pudding and chocolate pudding are made separately and then layered, so i figured i would include both in case you are interested. the chia seed pudding ends up having a texture sort of like tapioca, as the seeds plump up when they absorb the liquid.
Banana Chocolate Chia Seed Pudding
Ingredients
0.5 medium banana, mashed
1 tbsp blue agave nectar*
1 tbsp cocoa powder, unsweetened
6 tbsp chia seeds
1.5 cups vanilla almond milk, unsweetened**
For garnish:
0.5 medium banana, sliced
2 tbsp 0% Greek yogurt, plain
1 tsp chocolate chips
Instructions
1. To make chocolate pudding: In one mason jar or any container combine 4 tbsp chia seeds, 1 cup almond milk, cocoa powder & agave nectar. Stir well.
2. To make banana pudding: In a second mason jar or container combine mashed banana, remaining chia seeds (2 tbsp) and almond milk (0.5 cup). Stir well.
3. Cover both jars and refrigerate for at least 4 hours or overnight.
4. To serve divide equally between 2 bowls or glasses and layer in the following order: chocolate pudding, banana, banana pudding. Top with Greek yogurt and chocolate chips.
*i've been reading about how agave nectar is not perhaps the best sweetener to use, so one could easily substitute whatever other sweetener you like.
**i use whatever nut milk i have on hand. or sometimes, i buy unsweetened chocolate almond milk for extra chocolately goodness. :D
***and as i said, i often add cinnamon, though i don't know how much - i just shake shake shake the penzeys jar until i'm happy with it, lol.
and here's a bonus chia seed pudding recipe, from that 3-day high-raw eating plan that i did. this was one of the breakfast options.
cinnamon chia seed pudding
2 tbsp chia seeds
1/4 cup almond milk*
1 tsp cinnamon
2 tbsp fresh blueberries or raisins
soak the chia seeds in the milk and let it sit in the fridge for at least a few hours or overnight, until the milk is absorbed. then stir in the cinnamon and fruit.**
*i used 1/2 cup because 1/4 cup did not seem like enough.
**i think i put the cinnamon in with the chia seeds and milk and let it all sit together, and added the fruit at the end. and i ought to make this for breakfast again! it was nice.
