30-day smoothie challenge - day 21

Here is your Day 21 Young and Raw Smoothie of the Day Recipe: Tropical Ginger Green Smoothie

  • 1 cup pineapple
  • 1 orange
  • 1 inch knuckle ginger
  • 4 leaves kale
  • 1 cup water or coconut water (i presume - the recipe actually left this ingredient off today)

this is one of the most delicious things i've ever tasted.  (mimi, i can feel your teeth cringing from here.)  if you've been following this space, you may have surmised that i love ginger from the way i kept saying most of the parsley smoothies would taste better with a bit of ginger, lol.  this smoothie was just delicious - the sweet-tart pineapple/orange combo with the spicy bite of the ginger was pretty much perfection.  i used lacinato kale and red kale, two leaves of each.  and it was good, and i was happy, lol, and wished for a longer tongue to lick the glass ...

today as i was tasting this morning's smoothie, it occurred to me that next month when i go out of for a couple of days, i probably won't be able to start every day with a green smoothie and it made me very sad.  this is definitely a habit i intend to continue long past this challenge, and that feels really good.

on a related note, tonight i made the kale chips.
they were pretty good.  pretty satisfying for a crunchy sort of snack.  a bit fragile, and i wouldn't think they'd keep at all.  the hardest part of the process was drying the leaves, lol - they need to be dry so it crisps instead of steaming.  i used mostly the lacinato kale because i thought it would be more sturdy, and it was.  but the curly kales - i used a little of each of the red and green just to try all the kinds - had an extra crispy texture.  the stems of the lacinato kale were a bit chewier rather than crispy.  but all in all, it was pretty tasty and satisfied my urge for a crunchy treat like potato chips.  i drizzled with olive oil and used a little of the penzeys garlic salt, spread them out on a cookie sheet, and baked at 350 for about 10 minutes.  i cooked them a little longer than that because the timer pinged and i shut it off, and then i'm not sure how much longer it was before i went, 'oh, i'm supposed to take the kale chips out,' so mostly i'm glad they weren't ashes, lol.

in other news, this afternoon i had a meeting with my former expressive arts therapist to talk about an idea i'd had for a workshop that i asked her if she wanted to co-facilitate with me.  so that's going to happen next month, and i'm pretty excited.
she asked me why i wanted her to do it with me, since in her opinion, i have all the skills to do it myself, and i basically said that i'm a bit intimidated at the idea of doing it by myself, but after this, that might be more plausible.  also, she told me about her new space, which might be a place where i could hold my laughter yoga class again.  it's a house that a friend of hers is renting to use as an art space, and she's allowing others to use it for just 20% of whatever their proceeds are, so she might not mind if it's not very much and i would pretty much give her all of the donations unless i started raking it in, lol.
