"Ohhhhh, enchiladas!"

Oh my.

My mom out-did herself yesterday for Jeff's birthday! He requested eggplant parmesan. Now you know how a person would normally do that... get a caserole dish and make a nice dinner that would feed four or five. Mom, used 3 eggplants and used one of the foil trays that would normally hold a very large turkey. And it was full! And dad, the genius...'it needs more cheese'...there were puddles of mozzarella cheese. Was a good call on everyone's part! I had seconds, Jeff had thirds, Ray was delirious with joy and HAD to have salad with it.

Afterward, as if that wasn't enough, there was chocolate fudge cake.

I'm still full!

But it was a fun night - we got him a couple t-shirts and I gave him a hat that I knitted for him. Couldn't really tell if he liked the hat all that much, he took it off right after he tried it on. It was a fun night though despite I missed knit night too, still, I will be there next week fo sho and there really isn't any reason to not get together on any other night too :) We all live in the same city so it's all good. Impromptu knit nights are always fun. :)

Speaking of, Mom and I are going to do a bit of yarn-touring on Saturday. We're going to Fonthill to hit Rose's fine yarns, then to Canadian Comfort Alpacas, then, if we're adventurous, Stitch in Grimsby. We haven't been to Stitch yet but I've heard good things.
