Yet another recipe. This one is great diet food.
What you'll need:
2-3 chicken breast filets, boneless, skinless
Cavender's greek seasoning (low sodium)
1 can diced tomatoes (well drained)
1/2 cup diced white onion
1/2 cup diced cucumber
2 tbsp balsamic vinegar
dash of lemon
dash of pepper
fresh whole wheat pitas
3-4 capers (optional)
Makes several pitas
Directions:
Cover chicken breast generously with the greek seasoning, place in oiled pan with capers. Cook thoroughly.
Place all remaining ingredients in a bowl and mix well. Add lemon and pepper as needed.
Once chicken is cooked, dice it up and toss into mixture.
Heat up pitas in the microwave for ten seconds or so. Just enough to soften them up. Stuff with mixture and enjoy!
Very yummy. Even Dale likes these. And he grimaces at the mention of "health food". =D
